Mix the flour and seasoning in a small bowl. In a second small bowl whisk eggs. In a third small bowl pour the panko bread crumbs and add in the seasoning to include chili powder, paprika, salt, and pepper. Set the three bowls aside.
Preheat the air fryer at 400 F for 5 minutes
Cut the avocado in half lengthwise. Remove the pit and slice into ½ inch thick slices, cutting to the peel but not through it. Gently remove the slices from the peel. A large avocado makes 8-10 slices.
Dredge each avocado slice in flour mixture, then egg, and lastly in the panko bread crumbs and place in preheated air fryer basket. ** If you want to make these without breadcrumbs, just dip them again in the flour mixture!
Lightly spray slices with olive oil or avocado oil spray.
Air fry at 400 F for 7 minutes, and then add an additional 1-2 minutes to reach golden browned color. Sprinkle with more salt before serving.
Notes
Avoid Overcrowding air fryer. The more room the avocado slices have, the more crispy they will become. Keep an eye on avocado fries toward the end of cooking as they brown quickly
It is helpful to whisk one egg, and then whisk the second egg when you need it, to avoid flour build up in your egg mixture.
This is an easy recipe to cut in half if you just want to cook 1 avocado. You might not be able to cut the dredging ingredients in half since they need to be well coated.
